tacos

I have been craving tacos, but was afraid they would not be good without cheese. I didn't even miss it with these! The only problem is that I never measure or use exact recipes so I can only give the ingredients i used! I know i'm not the only one around here who does that!

Tostada Shells (I used Bearitos from whole foods) If you don't tolerate corn, maybe it would be good over lettuce or some other greens or one of the "bread" recipes here.

For one person:
1 boneless, skinless chicken breast cut into 1" cubes
1 leek, sliced (i only used a small portion of one)
approx. 1 T canola oil
Briefly saute leeks and then add chicken. Cook until slightly browned. Add the following spices during cooking:
paprika (a pinch)
season salt (to taste)
1/8 tsp (rounded) cumin (i mixed it in a tiny bit of water before adding to chicken so it didn't stick to just a few pieces since it is strong)
cayenne pepper to taste
I added a pinch of basil, but just because i felt like it...it is probably weird with the other spices but you couldn't taste it)

I put refried beans on the tostada and topped with the chicken. I used soft yellow corn tortillas also for variety.
What made this so good was that i made homeade refried beans. I have a hard time digesting pinto beans, but i can eat them if they are pureed (and i remember to take my digestive enzymes!!!!) I had some cooked pinto beans in my freezer. I defrosted them, pureed them in a blender and cooked them in a little canola oil in a skillet until they thickened up a little. I added some extra cayenne pepper and season salt to them as well. Although i'm sure i had put some in when i cooked them! I like things spicy!! Enjoy!

Mmm, sounds really good.

Just in case anyone else can't have corn (and is hesitant to just try this over just lettuce), I just wanted to confirm that it does go great with just lettuce as a "shell". I was pretty upset when I found out I had an allergy to corn (b/c I lived off of refried beans & corn tortillas at the time), but I tried the lettuce option & it works fine.

I eat them all the time, in fact. And if you're in a hurry, there's a real easy option: I just heat up refried beans & lay them on top of a bed of romaine lettuce, kind of like a taco salad. Or if you have the large iceberg lettuce pieces, you can sometimes even wrap it up like a burrito & eat it. If I have chicken handy, I toss that on top too. Then I add on avocado slices, alfalfa sprouts, sometimes salsa or pico de gallo, & my buffalo sauce (butter & Tapatio's hot sauce mixed together). The beans make it filling & I just love this meal. Next time, I am going to give Jennifer's recipe a try though, it sounds great!

As many of you are already aware, corn is highly genetically modified in any foods not marked non GMO or organic that are made in the US.

There is recipe for corn free and wheat free wraps/tortillas on the recipe forum under breakfast recipes.

Also, be aware of the digestive challenges of combining meat with starch.
