A simple salad, both refreshing and satisfying.
This made about 3 cups for me:
1/2 cucumber peeled and cubed
1 tomato cubed
sliced black olives
1/4 red onion sliced
1 hard boiled egg sliced
cilantro and or parsley (2 T each
olive oil, a splash of organic cider vinegar with optional italian spices added
optional hard sheep feta cheese (if healthfully enjoyed)
avocado is also optional
Mix all ingredients in a bowl and enjoy!
