*Pumpkin Coconut Flour Pancakes

I can't eat any grains at this point so even using rice flour is out for me.  I really like these pancakes and they are easy to make:


3 eggs

4 tbsp coconut flour

1 tsp vanilla

1/2 tsp baking soda

1/2 cup pumpkin

1/2 tsp each cinnamon, nutmeg, ginger and 1/4 tsp allspice

Stevia to sweeten

Coconut milk or almond milk (or could use rice milk) to make desired consistency


Mix all together and cook!  You need to cook them on low heat and slowly - they take longer than regular pancakes.   Took me the first batch to figure out how long to cook.  Make them small so they are easy to flip.
