Mint Smoothie


  • 1/2 avocado
  • 1 cup fresh spinach
  • 1 scoop protein powder (vega smoothie blend is one I like - vanilla)
  • 1/2 cup unsweetened almond or coconut milk
  • 10-12 drops of stevia plus 3 drops of culinary peppermint extract
  • a few fresh mint leaves (optional)
  • 1/4 teaspoon peppermint extract
  • 1 cup ice
  • Optional: cacao nibs


Place avocado, spinach, protein powder and milk in a blender and blend until smooth. Add the  extract and ice and blend until thick. Taste and adjust stevia as needed. Serves 1.
