Low carb fluffy coconut pancakes for one

Simple as can be. Whip the eggs, add the rest of the ingredients and spoon onto a lightly oiled iron fry pan. Makes approximately two pancakes.

2 eggs - whipped lightly

1 T tapioca flour/starch

1 T coconut flour

1/2 t Attogram psyllium blend

pinch salt

2 t melted ghee

1/4 t organic baking powder

1 T ground/powdered or shredded coconut (optional)

pinch or 1/4 tsp vanilla

3 stevia shakes (or to taste)
