Kale Salad

2 cups washed/chopped kale
3/4 cup julienned carrots
1 small red onion or 3 shallots diced/julienned
1 tsp sesame seeds and or sliced almond

1/2 cup Coconut amino acids
1/8 cup sesame oil
Fresh grated ginger to taste
Stevia or vegetable glycerin for sweetness to taste

Clean kale taking out large veins, chop up
Blanch kale in boiling water for about 3-5 minutes till bright green- drain and let cool. Whisk coconut aminos, sesame oil, ginger and sweetener together
Poor over carrots and onions/shallots. Add kale when cool, toss, chill for a couple of hours, serve

Makes a great base for grilled or bar-b-qued fish with lemon!
