Creamy Lemon-Ginger Carrot Cabbage Salad for stage two

A very flexible recipe:


Depending on how much dressing you have you can make the right size salad to match. Any ratio of the following together works well with the exception of large amounts of onion. I use a teeny amount just for accent. And, when you're on the maintenance diet and can have raisins - this is a nice touch too.


shredded carrots

thinly sliced cabbage

coriander (optional)

onion (optional)

apple chopped (optional)

cranberries- unsweetened dried

celery chopped small or chopped almonds or both


Dressing - just put in a small blender together and moisten as much as you would coleslaw (though the dressing is a bit thicker than this)


1/3 cup hemp seeds- shelled

1/2 cup olive oil (or sunflower)

1/2 medium apple 

1/3 cup cider vinegar

2 T lemon juice

1/2 tsp lemon rind

1-3 tsp fresh ginger

stevia and seasalt to taste (I like a very mild sweetness to this)
