*Cranberry-Orange-Nut Loaf candida desert

Cranberry Orange Nut Loaf
this I made-up using several recipes

Beat 2 large eggs in bowl until light
1 ½ c. flour(brown rice,or a mixture of buckwheat, amaranth and oat bran flours)- or try all purpose flour
2 ½ t. baking powder
1 c. unsweetened almond milk
¼ c. clarified *butter
2 T. grated organic orange peel
¼ c. vegetable *glycerine or (could try yacon)
dash nutmeg
½ c. *nuts
1 ¼ c. unsweetened cranberries (dried or fresh)
Beat well until blended. Pour into greased, floured bread pan. Bake 40-50 minutes until toothpick comes out clean. Cool before slicing. This really "hit the spot" for me for a Christmas Bread. It's great toasted with a little clarified butter!

I made this last night and it is just so yummy!

Used 1/4 cup brown rice flour and 1 cup buckwheat flour. Didn't have any oranges so put in some lemon zest but you couldn't taste it. Used stevia instead of veg. glycerine which worked fine. And used macadamia nuts. Was a bit heavy handed on the nutmeg so will tone it down next time and add some cinnamon too I think.

But definitely one that I will make again.

I made this for a Christmas breakfast treat (for myself and the children)- we were all very happy with it (the children preferred it topped with fruit spread as it did turn out quite tart). I used coconut milk and added shredded unsweetened coconut as well as some vanilla. It was hard to limit though...I'm just not good at that with these fabulous baked goods- I think I'll have to stop making them for a while Smile
thats a good question. I tried 350 but the outsides cooked much more quickly than the inside- the outside was brown and getting hard but the insides were quite gooey so I turned down the heat. I would try 300 or lower, but hopefully someone else will chime in who had a more successful baking Smile
not that mine were not successful, they were delicious, but I think the baking temp. should have been lower Smile
Thanks I heart Stevia. I went ahead and baked it at 350. It seems to be the standard. It came out perfect, in fifty minutes. I used 1/4t stevia, chicolin in addition to the vegetable glycerin. For the nuts, I threw in pistachios. Delicious!
