I used the Arrowhead Mills Gluten Free Pancake & Baking mix because it was cheap, but I recommend getting all the ingredients separately, so there's less room for surprise.. There's lots of pancake recipes from scratch on here.
1 cup pancake mix
1 egg or egg substitute
1 tbsp ghee, coconut oil or macadamia nut oil
1/4 cup rice/soy milk
2 tbsp sugar free cranberry juice
1 tbsp vegetable glycerine (or a couple packets of Stevia)
1/8 carob mix
as many blueberries as you want, mashed (I leave some whole)
Preheat lightly oiled pan to 375. Mix up all of the ingredients. Start cooking! Pour it in and turn when bubbles appear/edges dry. Careful when turning these as the carob makes them sticky. I at first used 1/4 carob mix and that turned out to be too much, plus carob's high in carbs.
Makes 4-5 pancakes
