*Apple Pancake

This is great for those who can tolerate apples in Stage II or III.

4 or 5 med apples
1-2 TBSP ghee
2-3 tsp stevia
1 tsp cinnamon
1 tsp vanilla flavoring

Peel and cut apples into wedges and saute in ovenproof skillet in ghee until starting to get soft. Add cinnamon and vanilla.

Meanwhile- mix
1 cup rice flour
1 cup coconut milk
2 egg whites
2 eggs
1/4 tsp salt
1-2 tsp stevia

Combine all and beat until well blended.

Pour batter over the hot fruit and bake at 425 for 20 minutes. Reduce heat to 350 and bake for another 10 minutes or until puffed and brown.

Cut into wedges and serve with candida safe syrup.
