Rhubarb Upside-Down Cake 4 cups rhubarb 2 TBLS veg. glycerin 1 TBLS arrowroot powder 1/2 tsp stevia 2 TBLS chicolin (or agave inulin) 1 tsp xanthum gum 1/2 cup rice milk or your favorite milk Chop rhubarb and put the veg. glycerin with it in a bowl and let it sit for 1 1/2 to 2 hours. This makes the rhubarb sweeter. Mix arrowroot powder, stevia, chicolin, and xanthum gum together. Slowly whisk in the rice milk. Add more rice milk if it looks too thick.
