I made these this morning for my husband and me and they were so good and "normal". No one would guess these weren't Waffle House variety!
2/3 C. spelt flour
1/3 c. soy* flour (maybe try garbanzo instead?)
1 T. potato starch
1/4 t. xanthan gum
1 t. Baking powder
1/2 t. Baking soda
1/4 t. sea salt
1 t. vanilla
3 T. melted ghee
1 cup soy* milk with a t. lemon (mock buttermilk)
Heat up the waffle iron. I use the thick belgian waffle iron and this makes three. Make sure you oil it well to prevent sticking! Cook for 2 1/2 minutes.
I hope you find these as yummy as we did.
I dipped mine in vegetable glycerin with a sprinkle of cinnamon and maple flavoring.
