Sun Dried Marinara Sauce - raw

1/4 cup diced red pepper

2 cups roma tomatoes, chopped

1 clove garlic

1 cup sun dried or dehydrated tomatoes

1/8 cup basil, diced

 

Soak the dehydrated tomatoes (4 hours in very hot water), drain and blend with the fresh tomatoes and red pepper with a hand blender or small food processer. Mix in the basil in a serving bowl.

Serve over your choice of:

 

pasta or over spiralized veggies raw or cooked (veggie ribbons created  using a spiralizer device)

 

Raw spiralized zuchinni, yellow beets or sweet potato

 

OR lightly sauteed:

 

sweet potatoes

yellow beets 

squash
