Thai Coconut-Curry Soup
3 cups water, carrot juice or coconut water (add half water room temp then half when ready to eat)
1/4 cup fresh lemon juice
1/4 cup olive oil
1/4 cup nama shoyu or 1 tsp sea salt
2 T agave or 2 large dates or 2 T yacon syrup
2 T ginger, peeled
2 T coconut butter
1 T curry powder
Combine all ingredients in a blender and blend until smooth. Add avocado slices and garnish with chopped scallions or chives. For added heat add one small chili pepper , more ginger or some cayenne to taste.
