*leek and potato soup

Here's a simple recipe similar to the cauliflower one....Quick, easy and very satisfying.

2-3 large leeks chopped
2-3 potatoes (Yukon Gold are best)
water (Vegetable broth better if have it.)
onion chopped
little sea salt
herbs (optional)
little olive oil

Heat oil in large pot. Saute onions and chopped leeks. Add potatoes, then water or veb. broth - just enough to cover the vegetables. Add little salt and herbs if like. Boil, let simmer. Either mash into chunky soup or blend smooth.

You could garlic etc, but i find the leeks add an incredible tasty flavour on their own.

Some people don't like to combine vegetables and potatoes, but i find it to be fine...

I made a variation of this yesterday. I added garlic and used a chicken bone broth I had made. I used coconut oil in place of olive oil to sautee the onion and garlic before adding the broth. Then I used rutabegas for the potatoes. Rutabegas are starchy, but they are on the OK list- the soup was the greatest meal I have had in a while (I have been craving potato/leek soup).

Hello, I am new to the site and i want to be clear about the foodlist. I would like to know if i could eat all of the foods on the ok list during phase 1?
