This makes a great breakfast if you are looking for a high protein meal without eggs or dairy.
Organic Turkey Sausage:
1 pound organic ground turkey
1 teas. sea or celtic salt
1/4 teas. pepper, nutmeg, cumin, marjoram, ginger
1/2 teas. basil, oregano, garlic powder, onion powder, thyme, and sage
Mix together and form into small patties. I wrap them in wax paper and a ziploc and freeze until I want to use them.
Soak and sprout quinoa and cook ahead. I place them in glass dishes and freeze. I pull one out the night before to thaw in the refrigerator.
Spinich, Zucchini, bell pepper, green onion, broccoli etc.
Fry the sausage pattie. I always add a small amount of water to my pan and put a lid on it to allow it to steam-cook. I cut the pattie into bite sized pieces and place back in the pan with a bit more water and the quinoa. I steam until the quinoa is warm. (About 2 minutes) I add the vegetables and a bit more water and replace the lid to steam heat the veggies for 2-3 minutes. I toss and add some organic EVOO or coconut oil and salt and pepper to taste.
