*Great Choc ice cream

Best ever ice cream non dairy and no sugar I found at Ann's Almond Choc Ice Cream

3 1/2 cups nut milk (almond or hazlenut) heated
1 tea vanilla extract
1/2 cup Amaretto ( I leave out)
5 egg yolks
2 oz semisweet choc
1/2 cup slivered almond, toasted

In a mixer or food processor beat egg yolks until light and fluffy; gradually pour the hot nut milk into whipped egg yolk mixture making sure you keep whisking constantly so the eggs don't curdle.

Pour mix into saucepan and add choc, vanilla and stir to mix. Cook until the custard thickens enough that it coast the back of a spoon.

Remove from heat and cool then refrigerate until cold then place in ice cream maker to finish process. Top with toasted almonds

I use Tropical Source* (sweetened) semi-sweet choc chips which are dairy and gluten free. You don't need to use the chocolate as the nut milks give the ice cream a great flavour on their own.
