This is a very popular recipe here in Bulgaria. I myself love it very much. Luckily, it seems to be suitable for Candida Dieters, so I decided to share it with you
First of all, the goat cheese in my country is white and tastes something like blue cheese (only it does not have fungi in it). If you can find goat cheese that resembles what I described, you'd better use it. Otherwise, you can experiment with other types of goat cheese
Ingredients (1 portion):
100 gr (white) goat cheese (use with care-may trigger allergies or binges)
a tablespoon of ghee
2 tablespoonfuls of yoghurt (if tolerated-see faq section on dairy)
2-3 slices of tomato (if tolerated, optional)
Put all ingredients except the eggs in a wide porcelain or clay cup (like the one in which you would serve soup). Bake for 10 minutes in a preheated oven. The cheese should be molten but there shouldn't be crust over it. Then add the eggs (poached on top) and put the cup back in the oven. Bake for about 5 minutes (till the eggs are boiled).
This dish is eaten while it is quite hot. Otherwise, the cheese hardens and is not so tasty any more.
