*Flax/oatmeal pancakes

1/2 c. oat flour
2 T flax seed ground
1 tsp. alum free baking powder
1/2 tsp. salt
1/2 tsp. powdered stevia
1 T oil
1 egg if you're not avoiding eggs otherwise it works fine without
Add water to make pancake consistency and fry like pancakes. Makes 2 about 1/2 cup each, hearty cakes
Topping:
1 TB almond butter
1 T flax oil
1/2 tsp powdered stevia
Mix until smooth and spread on top of pancakes.

I made these for breakfast this morning and they were great. Only difference is I topped mine with plain organic yogurt and lecitin granules. (Had no almond butter left...turns out the rest of the family likes it also...I will have to buy a bigger jar...lol)
