*Cracker/veggie dip

1 cup/medium baked sweet potato flesh
2 cups cooked garbanzo beans
1 small clove garlic
1 tsp. salt
1/2 cup extra-virgin olive oil

Place beans, sweet potato flesh, garlic and salt in a food processor. While motor is running, slowly add olive oil to form a smooth puree.
