Chocolate Mint Brownies

recipe by Michelle Irwin of Sugar Free Raw Desserts

2 cups raw walnuts or pecans (make sure very fresh and mold free)

1/2 cup shredded unsweetened organic coconut

4 tbs raw cacao powder

3 tbs raw carob powder

2 tbs filtered water

1 tsp mint flavoring (alcohol free)

1/2 tsp NuNaturals vanilla stevia

pinch unrefined sea salt

Place  dry walnuts, raw cargo powder, raw cacao powder, and sea salt in to food processor and mix until a fine powder is achieved. Do not over mix or it will turn into nut butter. Add coconut and mix until desired texture achieved.

Add water, mint, and stevia and pulse until the mixture sticks together when pressed.

With a spatula, press the mixture tightly into pan and chill for at least 1 hour. Store in air tight container for up to 5-7 days
