*Beet Borscht

This is a delicious and nourishing limit

 

8 cups chopped beets

1 lg onion

5 garlic cloves

2 cups water

1 carrot

1/4 green cabbage

3 Tbl of coconut oil or ghee

pepper and sea salt or coconut aminos to taste

 

Boil all ingredients and simmer for 15-20 minutes till beets are tender

 

Puree half of the mix and return to unpureed mixture 

 

Serve hot or cold
