*Almond flour biscuits

Since I eat a whole foods diet, I'm always looking for recipes with no animal products.  Found this recipe on a vegan website and tried them yesterday.  Amazing!  They are soft and wonderful.  I hope you give them a try.

 

1/3c unsweetened plant based milk (She used soy, I used almond)

2 tsp apple cider vinegar

2 TBS flax meal and 4 TBS water

1/2 TBS vegetable glycerin or 1/8-1/4 tsp stevia (adjust to your taste)

2 1/2 cups blanched almond flour

2 tsp baking soda

1 tsp baking powder

 

Preheat oven to 325 degrees.

Add the apple cider vinegar and sweetener to milk, gently stirring and set aside.  Will slightly thicken as it curdles.

Mix the flax meal and water and set aside.

mix remaining dry ingredients in a bowl.

Add flax mixture and milk mixture to dry ingredients and stir to combine well

Turn dough out on a cutting surface (I used my pastry mat)  Work in extra flour if too sticky (I had to do this)

Shape dough into an oval about 3/4" tall.

cut out biscuits with a biscuit cutter or a mason jar ring.

Place on parchment lined baking sheet and bake 15-20 minutes until edges are golden brown.

(I store them in the frig and reheat 5 minutes in toaster oven at 400 degrees.  Could be stored at room temp uncovered if going to eat the same day.  Once sealed up, they get soggy from the Flax, but reheat really well.)
