*Almond Flour Zucchini Muffins

Hi All! I've been looking around this site for a couple weeks, this is my first post, and I want to start by saying that you all totally rock, and I can't believe that I found somewhere that is so in-sync with what I have figured out to be true for myself over these past 5 years or so. For example, craving most what is worst for me, the gateway-drug effect of 1 intoxicating substance to the rest, etc. I'm so excited to have found this site. So, here is my first recipe contribution, adapted from Elaine Gottschall's "Breaking the Vicious Cycle".

Zucchini Muffins
3 c. grated zucchini
3 eggs, beaten
2 1/2 cups almond flour (I use Honeyville brand)
1/3 c. coconut oil
1/4-1/2 c. yacon powder (cheaper than the syrup, still ok?)
1/2 teas. liquid stevia (made from powder, directions on this site)
2 teas. cinnamon
1 teas. baking soda
1/4 teas. salt
Mix almond flour, oil, yacon, and zucchini. Add beaten eggs, cinnamon, salt, baking soda, and stevia. Mix well. Bake in mufifn tins, lined with papers, at 350 degrees for 25-30 min.

Hi i made these for breakfast and have been eating them all day yummmmm!Only one thing they are still really wet and musy in the middle.I mad the exact batter and poured it into six muffin cups and baked for 50mins at 200c/350f (my cooker is real slow)
Also would these be a limit food im after eating 3 out of the 6 muffins Razz
I made these this morning and wow! I really enjoyed them! I said yum with every bite. Smile. My one year old ate two and loved them. My husband thought they were okay. I used one cup buckwheat flour and the rest almond meal. I also added vanilla and almond extracts. I didn't have yacon powder so used 1/4 of yacon syrup in its place.

Hello, I was wondering, since yacon is a sweetner, can I just use extra stevia instead? I haven't been able to find the yacon powder and I was planning on making these soon but I wasn't sure how much 1/4-1/2c of yacon powder equaled liquid stevia. I'm new at cooking in general so I don't want to pour a whole bunch in lol. Anyone know a good ratio?
Ah, it doesn't seem I can edit or delete my own posts. Made this recipe today, instead of using the yacon powder I used 2 tsp of liquid stevia. They turned out pretty good, were definately super yummy! (my whole family had some! haha) only thing I'm gonna change next time I make them is to only use 1/4 cup of coconut oil. I had oil deposits soaked under the paper cups. Thanks for posting this yummy recipe!
