This is a single person breakfast size and of course can be scaled for more people. Perfect for a low carb or candida diet or low glycemic, low sugar diet!
1/4 finely grated carrot (or a mix of carrot and zucchini)
1 1/2 tablespoon grated apple
2 1/2 tablespoons flour (see blend below)
1/8 tsp baking powder
1/8 tsp pumpkin pie spice
pinch sea salt
1 T Ghee (melt in pan to coat pan and use the liquid to add to recipe)
3 shakes stevia
1/8 cup non dairy milk
Whip eggs with a fork then add other ingredients. May take a few minutes to thicken but if you have coconut flour in your mix it WILL thicken.
Add to oiled skillet and it will make about three pancakes.
Drizzle with yacon syrup
equal parts - low processed coconut flour (white and smells like coconut), tapioca flour, rice flour, sweet rice flour
can also add an equal part of teff, buckwheat (light), or sorghum- all equal parts.
