This recipe is from _The Yeast Connection Cookbook_ by William G. Crook and Marjorie Hurt Jones
I have several candida cookbooks, and this one is great. It has some truly yummy stuff in it. Especially the breakfast section is excellent, which is a tough meal to figure out sometimes.
1 cup cooked quinoa, amaranth or buckwheat
1 cup diced cooked sweet potato or butternut squash
1/3 cup Brazil nuts, almonds, pecans or cashews
1/3 cup water
1/2 t. vanilla (optional)
Put hot or cold grains or vegetables in a bowl. Grind nuts to a fine meal in a blender or food processor. Add water,vanilla, and 2-4 tablespoons of the grain. Blend until smooth.
I've never tried this with the grains because I tried the veges first and I liked it so much I've never strayed. I switch between sweet potato and butternut squash, and I use all different kinds of nuts for different flavors. I also like to add some ground cinnamon sometimes.
This is especially a good recipe if you are underweight, because the nuts add a healthy dose of calories and fat to the daily diet. If you are looking to lose weight, it's good with fewer nuts, but then it's lower on protein as well.
Once fruit is allowed in your diet (I'm not there yet), there's a version of breakfast pudding with different fruits, and there are tons of combinations so boredom isn't likely!
